Submitted to Asa-Parents, and I had to share it, it sounds divine and I think it would be a great dish for kindred or group gatherings especially in the fall when you have lots of potatoes and apples
Himmel und Erde: Heaven and Earth: 4 servings
- 2 lbs. (6 medium) potatoes, washed and peeled
- (I used 2 lbs. of red potatoes)
- Salt
- 4 tart apples, cored, peeled and quartered
- 1 Tbsp unsalted butter (I used salted since that’s what I had)
- Pinch of sugar
- Freshly ground pepper
- 1/4 lb. bacon, chopped and cooked
In a medium saucepan, cook the potatoes in boiling, salted water over medium-high heat for 15 minutes. (I did 10 for the reds since they’re small)
Drain off most of the water. Add apples, cook until tender, about 10 minutes. Drain: turn potatoes and apples into a large bowl. Mash. Add butter and sugar. (I added a little bacon grease as well) Season with salt and pepper. Turn into a serving dish. Sprinkle with cooked bacon.(I made a batch with 5 lbs of red potatoes and a baker’s dozen of apples of various sizes and flavors)
After making & eating it, here a few thoughts on variations: Add more bacon, caramelized red onions and perhaps some sort of cheese.
Another really easy side dish is Apples, Onions and Bacon: Cut up some bacon, render out the fat and put the meat aside. Slice up some peeled apples and onions thinly and cook them in the bacon fat until tender. Add the bacon back in. Serve. Great with pork chops!
